It not considered low carb as one fruit has about 15g (3g fiber).

I know some of these fruits and the author has already converted to impact carbs.

Tomatoes for example have Carbs: 3.9 grams Sugar: 2.6 gram per nutrition facts. I assume that the 1.3 is fiber and does not count. So net carbs is 2.6 grams (all the sugar) per 100 gram small tomato. That’s larger than what the author quoted as a serving. I always check myself for this. Since there is a lot of variation in low carb diets and serving sizes you need to do it yourself or they could mess you up.

I dissolve the gelatin in water (cold water first to soften, then hot water to dissolve) and add it in a slow pouring stream as I whip. It typically makes the mixture turn into a fluffy mousse.

The mixture was so smooth and fluffy and tasted very good. Then I added the gelatin. It immediately turned into Strawberry corn meal Fluff. I did some research and learned that about 1/4 of the Fluff should be mixed with the gelatin. The recipe should have mentioned this step in the recipe.
