There’s fermented and then there’s aged. And then there’s Andrew Weil. While in SE Asia recently I saw many adverts for cooker type contraptions called, believe it or not, garlic fermenters. I gather that all they do is just expose the garlic to a certain temperature until the aminos react with the carbohydrates (as you seem to imply in your article). That changes the colour and/or makes the garlic sweet. But to je this is no ageing, and it isn’t fermentation either. Fermentation tells me that biological action (by bacteria) is involved.
