It’s a bit harder to use without eggs, but it is possible to use no eggs with coconut flour. Just take a look at the Egg Free Brownie recipe at Low Carb Yum here: https://lowcarbyum.com/easy-egg-free-brownies-recipe/ (It uses gelatin and water in place of eggs)

For those of us with egg sensitivity it is just not possible! I get violently sick when the ratio is more than 2 eggs for brownies! I can’t imagine using 4 eggs for biscuits. Is there any hope I can change my baking or do I just give up everything?

I use coconut flour for almost all my baking, somehow I prefer it to almond flour, because I use lots of eggs and almond milk, which the coconut flour all absorbs an d give me a not too crumbly feel that I like…
But almond flour, just a little more liquid I add, my baking will just go bad… I like the almond gives though… But I never got choked from coconut flour baking

It has 14 grams of fat, 6 grams of protein, 6 grams of carbohydrates, and 3 grams of fiber for every 1/4 cup.” This is not accurate. Go back to the nutrition labels and do the math. As per Bob’s Red Mill Nutrition Label for each 1/4 cup of Coconut Flour has: 120 calories, 3 grams fat, 2 grams saturated fat, 18 grams carbs,10 grams fiber, 8 net carbs (carbs minus fiber), 6 grams protein. Likewise Bob’s Red Mill Nutrition Label for each 1/4 cup of Almond Flour has: 180 calories, 10 grams fat, 0 grams saturated fat, 10 grams carbs, 2 grams fiber, 8 net carbs (carbs minus fiber), 8 grams protein. Both have the same amount of net carbs.

Coconut flour is pretty common these days. It’s usually found with gluten-free baking ingredients. I have no problem finding it at Walmart and other retailers.

You do need to make changes to a recipe like add more liquid and or eggs when using coconut flour versus almond flour. I prefer coconut flour as it’s less inflammatory than almond flour. So it is a good option to almond flour as long as you know how to work with it.
