Although this recipe uses the stove top method, we now like to slow cook ours covered for a day or two. Because it’s covered and slow cooked, there’s likely more nutrients coming out of the bone with little reduction in liquid.

We’ve used it as a tonic. We roast the bones and the vegetables first, and sometimes add a drop of red wine for additional fortification. My husband drinks it for breakfast as part of his low carb lifestyle.
My method uses 6 quarts of water, simmered , uncovered, to a reduction of 3 quarts. You do not seem to have much of a reduction in your recipe.
My question is this, does your method produce more nutrients than mine?
